Cinnamon roll cookies

Do you like cinnamon rolls? Yes, you do! Do you like cookies? Yes, you do! Will you like Cinnamon roll cookies! Yummy, yes you will! These cookies are so wonderful, that you might want to double the batch right out of the gate!

Cinnamon is my absolute favorite spice and anytime I find a recipe that uses it in excess, I am very happy! This recipe was certainly no exception, in fact I believe I will be making these again as soon as the quarantine is over. It seems they have caught the attention of my co-workers as well!

This recipe makes about 18-20 cookies depending on size. Because of the smaller finished quantity, this is a nice cookie to make when you are staying home a lot, or going to a small gathering. Especially if you are taking these to an outing, cream cheese frosting is always a hit!

Detailed instructions

Step 1:

Preheat oven to 375 degrees and prep the cookies. Combine  your butter and sugars together and blend until smooth. Then add the egg and vanilla and blend once more.

Step 2:

Add the flour, cinnamon and baking powder to mixture until a dough forms and refrigerate for 30ish minutes.

Step 3:

Roll balls about 1 inch in size and place onto baking trays then take the palms of your hands and flatten to about half the size. Here they are pre-flattened for scale:

Step 4:

Bake for approximately 8 minutes until golden just around the edges and set on the top. Transfer onto racks for cooling. While the cookies are cooling, prep the frosting.

Step 1 frosting:

Blend together cream cheese and butter (SOFTENED) until smooth and then mix in vanilla until well incorporated.

Step 2 frosting:
Add in powdered sugar and milk until no powdered sugar lumps are present. Transfer into a piping bag or ziplock bag for piping. Refrigerate the cream cheese frosting until cookies have cooled all the way

Final step:

Frost each cookie with a swirl and top with a sprinkle of cinnamon. Eat one and enjoy each delectable bite! So, do they taste like a cinnamon roll in a cookie or what?!

Cinnamon roll cookies are delicious and oh so easy to make. A perfect cookie for the cinnamon lover or novice baker. This recipe is simple to make and looks professionally made!

Ingredients

  • For cookie:
  • 1/2 cup salted butter, softened
  • 1/4 cup lightly packed brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 1 1/2 tsp vanilla
  • 1 1/4 cup flour
  • 1 1/2 tsp baking powder
  • 1 1/4 tsp cinnamon
  • For frosting:
  • 4 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 1 1/4 cup powdered sugar
  • 1/2 tsp vanilla
  • 1 TBS milk
  • cinnamon for sprinkling

Notes

Make sure your butter and cream cheese are well softened for the frosting!
