Heavenly Peanut butter brownies

I have been on a baking kick lately. As like many of you, I am laid off and my state is in “stay home, stay safe” until the beginning of May. This has given me lots of time to make all kinds of things and share my favorites with you! This peanut butter brownie was a request from my husband. Now I have made these brownies many times before, always with little tweaks to make them “healthier”. Well as healthy as a brownie can be really. As I am sure you have learned by now, even in baking, I like to reduce sugar when possible. This recipe is no exception to that school of thought either. And may I make a recommendation- plan to give half of these away or else you will end up eating them all very quickly. Take that from the lesson learned the hard way from my husband and me.

As an added bonus, these brownies are very very easy to make. They take very little effort to turn out flawlessly, and even a novice baker can make these without a problem.

Detailed instructions:

Step 1:

Pull out a 9 x 13″ pan and spray it with nonstick spray. Preheat your oven to 350 degrees- the batter only takes a few minutes to prepare, so make sure to get that oven preheating right away!

Step 2:

Make the brownie batter first: In a medium sized bowl, cream together the peanut butter and softened butter. Add in the eggs, vanilla and brown sugar and blend until well incorporated. Now mix in flour until combined. Ta-da you have made the brownie batter! See! I told you it was super easy! Now spread your batter into the 9″ x 13″ pan and cook in the oven for 30 minutes or so. I like to cook for a few extra minutes to get the edges a little bit chewy.

Step 3:

While the brownies are cooking, let’s prep the frosting. Cream together the peanut butter and butter. Add in vanilla, milk and powdered sugar and blend well until there are no lumps. Some people may want this frosting sweeter, if so, add in an additional 1/4 cup of powdered sugar. Once brownies are cooled, spread the frosting over evenly and enjoy!

A delicious peanut butter brownie with a sweet peanut butter frosting. Quick and easy to prepare and perfect for the peanut butter lover in your family!

Ingredients

  • For the brownie:
  • 1 cup creamy peanut butter
  • 1/2 cup salted butter, softened
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 3/4 cups packed light brown sugar
  • 1 cup all purpose flour
  • For the frosting:
  • 1 cup creamy peanut butter
  • 1/2 cup salted butter, softened
  • 1/2 teaspoon vanilla
  • 2 Tablespoons milk
  • 1 cup powdered sugar
