I love baking. But what I don’t love about baking is the amount of sugar I am always using. When feeding my toddler, I try to limit the amount of sugar he is consuming. Like most moms, I am sure. I slowly worked on this recipe by reducing the sugar from 1/2 cup to 1/3 cup and finally settled on 1/4 cup. I can live with my son having 1/4 cup of added sugar between 12 toddler muffins. That’s only 1 teaspoon per muffin of added sugar!
Another thing I love about these muffins is that they use fruit and items that you are always going to have in your pantry. It makes making these often a breeze! And like most things I make, these are totally customizable. You can add chopped up fruit, nuts etc to this recipe to make it your own!
Detailed instructions:
Step 1:
Pre-heat oven to 400 and place 12 silicone muffin inserts into a muffin tray. If you don’t have silicone inserts yet, please do yourself a favor and get some! Why, you ask? One, they are reusable. Two, they are a million times easier to use than the paper cupcake liners. And three, they can be used for so many different things than just cupcake/muffin liners. I often use these in my toddler’s lunch box to separate food items. Pick up the set I use here
Step 2:
In a medium sized bowl, mash the banana until it is almost runny. Then add applesauce, egg, milk and sugar and combine well. Add the oats, cinnamon and salt and mix until just combined.
Step 3:
In a separate bowl or bag mix flour, baking soda and baking powder. You want to make sure they are well mixed. Taking a bite with a chunk of baking soda in it is real gross. (yes, I have experience in doing that- do not recommend)Then add to bowl and mix well.
Step 4:
5. With a tablespoon, add mixture into the 12 inserts until the mixture is gone. This is about 2 tablespoons worth each. Bake in the oven for 15 minutes then remove and let cool completely. They should look like this. Perfectly golden brown on top.

7. remove from silicone and place 6 toddler muffins in the freezer for future consumption.

A healthy alternative to the standard muffin, with fruit and reduced sugar perfect for little ones.
